It is served at holidays, weddings and family visits, and a tray of fresh baklava is one of the most appreciated gifts you can bring. Here’s what makes it special and how to enjoy it at its best.

What is baklava made of?

Good baklava has only a few ingredients, so their quality matters:

  • Yufka: paper-thin sheets of dough, stacked in dozens of layers.
  • Butter: traditionally clarified butter, which gives baklava its rich aroma and crisp texture.
  • Nuts: pistachios, walnuts or hazelnuts between the layers.
  • Syrup (şerbet): a sugar syrup poured over the hot baklava, often with a touch of lemon.

Pistachio, walnut or hazelnut?

Pistachio baklava is the most famous, especially when made with the bright green pistachios of Gaziantep in south-eastern Türkiye. The city is so closely linked to baklava that “Antep baklavası” is protected as a geographical indication. Walnut baklava is common in homes across the country and has a softer, earthier taste, while hazelnut versions are popular around the Black Sea.

Popular shapes

  • Classic square or diamond (kare baklava) — the traditional tray cut.
  • Carrot slice (havuç dilimi) — triangular pieces with extra pistachio.
  • Şöbiyet — triangles with a creamy filling and pistachio.
  • Burma / sarma — rolled baklava, wrapped around whole pistachios.
  • Bülbül yuvası (“nightingale’s nest”) — small rolled nests filled with nuts.

How to tell good baklava

Fresh, well-made baklava is crisp on top and moist inside, but never soggy. When you bite into it you should hear a light crunch. The syrup should be absorbed into the layers rather than pooling on the plate, and the taste of butter and nuts should come before the sweetness.

Storing and serving

  • Keep baklava at room temperature in a cool place, loosely covered. The fridge makes the pastry hard.
  • Enjoy it within the time stated on the box — baklava is best when fresh.
  • If it softens, warm it for a few minutes in a low oven to bring back the crunch.
  • Serve it with Turkish tea or coffee, or with a scoop of plain ice cream or kaymak.
